Chilgoza Pine Nuts

Chilgoza cannot be farmed. The cones are brought down from wild pine at altitude, opened by hand, and the seed inside is what you get — long, thin-shelled, sweet and resinous. It is the most expensive nut in the shop for one reason: a full day's climb yields very little of it.

The one nut on the counter nobody can grow more of. Winter stock, and when it goes it is gone.
