Kashmiri walnuts grow slowly at altitude, which makes the kernel oilier and sweeter than imported stock. Ours are cracked by hand and never sulphur-bleached, so they stay amber. Uniformly pale white kernel has been treated.

How to keep it
Airtight, away from heat. Refrigerate in summer — the oil content is high, which is the point, but it also means they turn if left warm.
